RECIPE OF THE MONTH

MARINATED MUSHROOMS

3/4 C. olive oil

1/3 C. wine vinegar

1 1/2 tsp salt

3/4 tsp sugar

1/2 tsp dried basil

1 bay leaf

1 garlic clove, quartered

1 1/2 lbs med. mushrooms, halved

6 peppercorns, (whole)

(early in day or day before serving):

In med. skillet over medium heat, heat to boiling all ingredients except mushrooms; simmer over low heat, covered, 10 minutes. Stir in mushrooms until coated. Over medium heat, cook 3 to 5 minutes until fork-tender. Refrigerate, covered.

At serving time: drain mushrooms. Makes 6 to 8 relish servings.
